Recipe Swap: Broccoli slaw is healthy and easy to fix

Roberta "Pat" Michal called with a request for more simple recipes for seniors who don't want to spend a lot of time and energy in the kitchen.

When I asked for an example, she offered the following recipe for broccoli slaw.

This is a healthy and quick side dish that requires no cooking. Packages of fresh broccoli slaw are found in the produce sections of most supermarkets.

Though the recipe calls for orange sections, Michal makes a quicker job of it by cutting the oranges in half and scooping out the flesh with a grapefruit spoon.

Broccoli Slaw

1 12-ounce package fresh broccoli slaw

1 cup seedless red grapes, cut in half

1 Granny Smith apple, unpeeled, diced

2 oranges, peeled and sectioned

1 cup poppy-seed dressing or Vidalia-onion dressing

Place all ingredients in a bowl and toss until vegetables and fruits are well coated. Keep refrigerated until ready to serve.
